My husband and I love Chinese food. Besides being delicious I like that most of the recipes are quick. Fried rice is a dish that I cook often. I can usually find left overs in the fridge to incorporate.
While you can cook a fresh pot of rice to make fried rice with, I prefer to make it with leftover rice. Whenever I cook rice I make extra just for that purpose. I also make sure to bring home leftover white rice when we eat out. Just don't try to do it at a buffet or the POS system called the waitress will catch you :D
I am going to give a basic recipe below. The idea is to expand on it and use what you have on hand. If you have leftover chicken, pork, beef, broccoli or any other vegetable throw it it. Be creative, it'll be good!
Fried Rice Recipe
3 T. oil
2 eggs, lightly beaten
1 clove garlic, minced
3 scallions sliced, whites and green tops
1 cup chopped bok choy or other cabbage
1/4 cup diced carrots
1/4 cup fresh or frozen peas
1 cup of cooked meat of your choice
3 cups cooked rice
3 T. soy sauce
1 tsp. toasted sesame oil
Heat wok over high heat and add 1 T. of oil. Swirl it around to coat. Add the egg and swirl it around to spread it out. Flip the egg to cook the other side then remove from the pan. Add the other 2 T. of oil and add the scallion, garlic, cabbage and carrots. Stir fry for 1 to 2 minutes. Add the rest of the ingredients and stir fry until well heated through. Cut the egg into squares and add back in.
