I have the duty of husband sitting for a friend this weekend. :) She is going out of town on one of those all girl Vegas vacations and I'm supposed to keep her husband fed. I don't mind. He loves my cooking so that makes me happy. LOL
His favorite dish of mine is one of the absolute simplest recipes I have. It's a crock pot Italian beef pot roast. You cook the roast until it falls apart then pull it apart with forks and serve it over pasta. Add a nice salad and crusty bread and its a meal. It's on the menu for tomorrow. Here's the recipe if you'd like to try it.
Crock Pot Italian Pot Roast
3-4 pound beef roast, whatever is on sale
1 jar Italian spaghetti sauce, I like Classico Spicy Red Pepper
1 teaspoon of Italian seasoning
1/2 teaspoon dry thyme
salt and pepper
Place everything in crock pot. Cook on high for 1 hr and shift to low. Cook until it falls apart. Usually takes 8-10 hours.
