Pistachio Dreams Recipe

I was flipping through my folder of recipes and found one that I had forgotten about. I can't imagine why I let it slip from memory, it is truly heaven on a plate. Pistachios are my husband's favorite nut so I know he'll be pleased that I found this recipe again.

Pistachio Dreams

1/4 c butter, room temperature
1/2 c all purpose flour
1/4 c chopped pecans
4 oz softened cream cheese
1/2 teaspoon each almond and vanilla extracts
1/2 c sugar
1/2 pint whipping cream whipped or 1 small container of cool whip
1 small pkg of instant pistachio pudding mix
1 1/2 c cold milk

Crust: Mix butter, flour and pecans. Press into 8 inch sq pan. Bake 15 min at 350 degrees. Cool.

Filling layer: Whip cream cheese until fluffy. Add sugar and extracts. Fold in about 1/4 cup whipped cream. Spread over crust.

Pudding layer: Prepare the pudding according to pkg with the milk. Spread over the filling.

Topping: Top with the whipped cream. If you have some, sprinkle with chopped pistachios. Chill until firm.

This recipe goes together quickly but looks beautiful when served. I have made it and broken up the crust up into the bottom of pretty stemmed glasses and then added the layers. However you do it, be sure to install the proper safety equipment in your kitchen so that you don't slip on the drool! LOL
