This muffin recipe is pretty decadent but oh so satisfying. It's definitely not a wimpy muffin. The texture is chewy with oatmeal and you will definitely taste the brown sugar. If you want a special treat for breakfast serve it with bacon. You will get that special sweet salty taste thing going. But be warned, you many need to pick up some weight loss pills afterwards. :)
Brown Sugar Muffins Recipe
1 cup heavy cream
1 cup pancake syrup
2 eggs, beaten
3/4 cup whole wheat flour
3/4 cup all purpose flour
3/4 cup granulated sugar
3/4 cup firmly packed brown sugar
1/2 tsp salt
2 tsp baking powder
1 tsp baking soda
1 1/2 cup rolled oats
3/4 c. pecans or walnuts (nuts are optional)
spray cooking oil
Preheat oven to 350 degrees F. Spray regular sized muffin tins with the oil. Place all ingredients in a large mixing bowl and whisk until blended. Pour into the muffin tins filling them about 3/4 full. Bake for 20-25 minutes. A toothpick inserted in the center should come out clean.
