Roast Beef Panini

I love to make panini sandwiches, almost every leftover in my house finds it's way into one. One of our favorites is made from my super simple pepperoncini pot roast, which I made the other day.

To make the pot roast - place a 3 -4 lb beef roast, 14 oz jar of pepperoncini peppers with juice and 3 or 4 garlic cloves into a slow cooker and cook all day. Don't add salt, the peppers have a lot. Add pepper if you want.

To make the panini take two slices of crusty, hearty bread and spread with mayonnaise, add a layer of roast beef, sliced tomatoes and top with cheese of your choice. We like provolone. Lay into an oiled panini press and cook until toasty. If you don't have a press, place into a skillet and put a heavy skillet on top, cast iron is great for this. Flip to toast the other side.
