Warming Up with Jalapeno Corn Bread

We are having the coldest weather in 10 years here in the Florida panhandle. That happened before we moved here so this is our first experience with these temperatures.

I have spent the entire day shopping for a good insurance quote and trying desperately to stay warm. In an effort to warm us up from the inside I made a pot of vegetable beef soup and a pan of jalapeno corn bread.

Jalapeno Corn Bread Recipe

1 cup corn meal mix
1 cup shredded cheddar cheese
1/2 cup chopped onion
1/4 cup chopped pickled jalapeno peppers
1 cup cream style corn
1 egg
1 cup sour cream
2 T. oil

Preheat oven to 425 degrees. Preheat cast iron skillet. Mix all ingredients and pour into preheated cast iron skillet sprayed with oil. Bake at 425 approximately 25 minutes, until golden brown.
